How a Low-Fat Plant-Based Diet Changes Weight - and Metabolism
Most weight-loss advice starts and ends with eating less. Dr. Kahleová's research points somewhere more interesting: that what makes up the plate can change how the body handles every meal - including how many calories it burns afterward.
The trial
In a randomised clinical trial published in JAMA Network Open in 2020, overweight adults followed either a low-fat vegan diet or made no change to their eating for sixteen weeks. Crucially, the diet group was given no calorie limit - no counting, no portions to weigh. The only rule was the composition of the food: plants, low in fat.
What changed
Compared with the no-change group, people on the plant-based diet:
- lost about 6.4 kg (roughly 14 pounds);
- reduced the fat stored inside their liver cells by 34% and inside muscle cells by 10%;
- increased their after-meal metabolism - the calories burned digesting and processing food - by nearly 19%.
That last point matters. Fat lodged inside muscle and liver cells is closely tied to insulin resistance. As it fell, the body's response to insulin improved, and the "afterburn" following meals rose.
Why composition, not just quantity
Dietary fat is dense in calories and tends to be stored readily. A diet built on vegetables, fruits, legumes, and whole grains is high in fibre and water and lower in fat - filling on fewer calories, without anyone having to ration. The weight came off not through restriction, but through a change in the kind of fuel.
The takeaway
You can lose weight by eating less of everything. But shifting the composition of your plate toward whole plant foods changes the underlying metabolism, not just the calorie ledger - and it does so without a hunger contest.
