Dietary AGEs: The Compounds That May Age You From the Inside
It is one of the less familiar ideas in nutrition, but a useful one: some of what ages us may come, quite literally, off the stove. Dr. Kahleová has written about dietary AGEs - and why they are worth paying attention to.
What AGEs are
AGEs - advanced glycation end-products - are compounds that form when sugars react with proteins or fats, especially under high, dry heat: grilling, frying, broiling, roasting. They are part of why seared food browns and smells appealing. The trouble is that the same compounds, accumulated in the body over years, are linked to oxidative stress, inflammation, and insulin resistance.
Where they come from
Two things drive the AGE content of a meal:
- The food. AGEs are highest in fatty animal foods - and in many heavily processed products.
- The cooking. The hotter and drier the method, the more AGEs form. The same ingredient has far fewer when it is boiled, steamed, or stewed than when it is fried or charred.
Lowering the load
You do not need a special diet to bring AGEs down - just a few shifts:
- lean toward plant foods, which start lower in AGEs;
- favour moist, lower-temperature cooking - steaming, boiling, stewing, poaching - over frying and charring;
- treat blackened, deep-fried, and heavily processed foods as occasional rather than daily.
The bigger picture
AGEs are not the whole story of ageing, and no single compound is. But they are a clear example of a theme that runs through Dr. Kahleová's work: it is not only what you eat, but how the food is prepared, that shapes the result inside the body.
